Vegetable Beef Soup - Good Anytime

With all the diverse weather we have had this month I have been busy lately with other things and not had time to post anything. Even though I am a bit rushed today I wanted to post my favorite vegetable beef soup recipe. It is quick and easy to make and YUMMY!






RECIPE

1-1.5 l bs ground beef
1- small onion chopped
2 - cans of beef broth (or can use 1 beef and 1 chicken)
1- large can of diced or crushed tomatoes ( I prefer crushed for a thicker heartier soup)
1- 28 oz bag of PictSweet Vegetables for Soup
Morton's Natures Seasons, salt and pepper to taste (I add lots of Morton's and black pepper)
1-2 tablespoons - Bacon grease to season (I always save leftover drippings in a jar for seasoning)
2-3 large potatoes peeled and cubed small (optional)

Brown crumbled  ground beef with chopped onions, drain grease. I usually do this in my stock pot to avoid extra pots and pans to wash. Add vegetables, broth, and tomatoes. Season to taste.  Bring to boil and then reduce heat. Simmer 45 minutes to 1 hour.  Enjoy with crackers or cornbread. We sometimes eat with the sweet yellow cornbread and it is delicious!
